Rustic Meat and Veggie Layered

Ingredients

  • 9 lasagna sheets, cooked and drained
  • 1 pound (450g) ground beef or turkey
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 1 (24oz) jar of marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. Cook ground meat in a skillet over medium heat until browned. Drain fat.
  2. Add onion, garlic, mushrooms, bell pepper, and zucchini. Cook until veggies are tender.
  3. Stir in spinach, salt, and pepper. Remove from heat.
  4. Preheat oven to 375°F (190°C).
  5. In a baking dish, spread a thin layer of marinara sauce.
  6. Layer with 3 lasagna sheets.
  7. Spread half the filling over sheets.
  8. Dollop half the ricotta cheese and sprinkle half the mozzarella and Parmesan.
  9. Repeat layers.
  10. Cover with foil and bake for 25 minutes.
  11. Remove foil and bake for 5 minutes until bubbly and golden.
  12. Allow to cool, then slice and serve.
