Ingredients
- 9 lasagna sheets, cooked and drained
- 1 pound (450g) ground beef or turkey
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach, chopped
- 1 (24oz) jar of marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- Salt and black pepper to taste
Instructions
- Cook ground meat in a skillet over medium heat until browned. Drain fat.
- Add onion, garlic, mushrooms, bell pepper, and zucchini. Cook until veggies are tender.
- Stir in spinach, salt, and pepper. Remove from heat.
- Preheat oven to 375°F (190°C).
- In a baking dish, spread a thin layer of marinara sauce.
- Layer with 3 lasagna sheets.
- Spread half the filling over sheets.
- Dollop half the ricotta cheese and sprinkle half the mozzarella and Parmesan.
- Repeat layers.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for 5 minutes until bubbly and golden.
- Allow to cool, then slice and serve.
