Quinoa & Roasted Vegetable Salad

Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups mixed roasted vegetablesof choice (bell peppers, zucchini, cherry tomatoes)
- 1 cup fresh mixed greens, chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- Toss the roasted vegetables with olive oil, salt, and pepper. Roast in the oven until tender.
- Combine cooked quinoa, roasted vegetables, greens, and red onion.
- Drizzle with lemon juice and olive oil, season with salt and pepper, and toss to combine.
