Ingredients:
- 2 pounds fully cooked polska kielbasa, cut in half lengthwise, then cut into 2 inch pieces
- 1 tablespoon extra virgin olive oil
- 1 head cabbage, coarsely chopped
- 1 large sweet onion, cut into large pieces
- 3 cloves garlic, minced
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons rice wine vinegar
- 1 1/2 teaspoons dijon or brown grainy mustard
How to make it:
For this dish, heat olive oil in a medium-high nonstick saute pan over medium-high, add the kielbasa, and cook without disturbing for one minute before stirring occasionally for three additional minutes until done and removed to a plate using a slotted spoon.
Add the cabbage, onion, garlic cloves, sugar, salt and pepper into the same skillet as some of the rendered kielbasa fat and stir together thoroughly before simmering on low for approximately 10 minutes, while occasionally stirring to ensure even cooking.
Mix in vinegar and mustard before returning sausage to pan; continue heating through until thoroughly heated; taste, adjust seasoning as necessary, and serve immediately atop mashed potatoes or alone!
