Baked Salmon with Broccoli Sauce

Ingredients

  • 4 salmon fillets
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

For the Broccoli Sauce

  • 2 cups broccoli florets
  • 1 carrot, peeled and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C). Season the salmon with salt, black pepper, and olive oil. Place the salmon fillets on a baking sheet.
  2. Toss broccoli, carrot, onion, garlic, turmeric, cumin, paprika, salt, pepper, and olive oil. Roast for 20-25 minutes until tender.
  3. Transfer roasted veggies to a blender, add vegetable broth, and blend until smooth.
  4. Meanwhile, bake the salmon for 15-20 minutes until it flakes easily.
  5. Spoon the broccoli sauce onto plates, place salmon fillets on top, and serve.
