Ingredients
- 4 salmon fillets
- Salt and black pepper to taste
- 2 tablespoons olive oil
For the Broccoli Sauce
- 2 cups broccoli florets
- 1 carrot, peeled and chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1/2 cup vegetable broth
Instructions
- Preheat the oven to 375°F (190°C). Season the salmon with salt, black pepper, and olive oil. Place the salmon fillets on a baking sheet.
- Toss broccoli, carrot, onion, garlic, turmeric, cumin, paprika, salt, pepper, and olive oil. Roast for 20-25 minutes until tender.
- Transfer roasted veggies to a blender, add vegetable broth, and blend until smooth.
- Meanwhile, bake the salmon for 15-20 minutes until it flakes easily.
- Spoon the broccoli sauce onto plates, place salmon fillets on top, and serve.
