Rich Cocoa Roll Cake

Ingredients

For the Cake

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 4 eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract

For the Filling

  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a jellyroll pan with parchment paper.
  2. Combine flour, cocoa powder, and baking powder in a bowl.
  3. Beat eggs and sugar until pale and fluffy in a separate bowl. Add vanilla extract.
  4. Fold in dry ingredients and mix to combine.
  5. Pour batter into the pan and bake for 12 minutes.
  6. Roll the cake in a kitchen towel while warm. Let it cool rolled up.
  7. Whisk together heavy cream, powdered sugar, cocoa powder, and vanilla extract until stiff peaks form.
  8. Unroll the cake, spread the chocolate filling, and roll it back up.
  9. Chill in the refrigerator for at least 30 minutes.
  10. Slice and serve. Enjoy!
