Creamy Mango-Orange Chia Pudding Parfait

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1-2 tablespoons honey
  • 1/2 teaspoon vanilla extract (optional)
  • 1 ripe mango, diced
  • 2 oranges, sliced

Instructions

  1. Combine the chia seeds, almond milk, sweetener, and vanilla extract in a bowl, stirring well.
  2. Cover and refrigerate the mixture for at least 4 hours or overnight. Stir the mixture a couple of times during the first hour to prevent clumping.
  3. When the chia pudding has thickened to your liking, give it a good stir to ensure it’s well-mixed.
  4. Divide the orange slices into serving glasses, then top with chia pudding.
  5. Top each serving with a generous amount of diced mango.
