Creamy Mango-Orange Chia Pudding Parfait

Ingredients
- 1/4 cup chia seeds
- 1 cup almond milk
- 1-2 tablespoons honey
- 1/2 teaspoon vanilla extract (optional)
- 1 ripe mango, diced
- 2 oranges, sliced
Instructions
- Combine the chia seeds, almond milk, sweetener, and vanilla extract in a bowl, stirring well.
- Cover and refrigerate the mixture for at least 4 hours or overnight. Stir the mixture a couple of times during the first hour to prevent clumping.
- When the chia pudding has thickened to your liking, give it a good stir to ensure it’s well-mixed.
- Divide the orange slices into serving glasses, then top with chia pudding.
- Top each serving with a generous amount of diced mango.
