Nutty Pomegranate Brownies

Ingredients

For the Brownies

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chopped nuts (walnuts or pecans work well)

For Topping

  • 1/2 cup pomegranate arils (seeds)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Melt the butter until it’s fully liquid.
  3.  Combine the butter and sugar in a bowl. Add the eggs and vanilla extract, mixing well.
  4.  Add the cocoa powder, flour, salt, and baking powder to the wet ingredients.
  5. Fold in nuts to the batter.
  6. Pour the brownie batter into the baking pan and spread it evenly.
  7. Bake for 25-30 minutes.
  8. Let the brownies cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Scatter the pomegranate over the top of the brownies once cool.
  10. Cut into squares and enjoy!
