Creamy Broccoli & Spinach Soup

Ingredients
- 2 cups broccoli florets
- 2 cups fresh spinach leaves
- 1 small chopped onion
- 2 cloves minced garlic
- 4 cups vegetable broth
- 1 cup diced potato (optional)
- Salt and pepper to taste
- Olive oil
- Pumpkin seeds
- Microgreens
Instructions
- Sauté onion and garlic in olive oil until translucent.
- Add broccoli, and potato (if using), sauté for 2-3 minutes.
- Pour in vegetable broth, and simmer for 15-20 minutes until tender.
- Add spinach, and let it wilt for 1-2 minutes.
- Blend soup until smooth.
- Season with salt and pepper, and reheat if needed.
- Serve hot, topped with pumpkin seeds, and microgreens. Enjoy!
