Creamy Broccoli & Spinach Soup

Ingredients

  • 2 cups broccoli florets
  • 2 cups fresh spinach leaves
  • 1 small chopped onion
  • 2 cloves minced garlic
  • 4 cups vegetable broth
  • 1 cup diced potato (optional)
  • Salt and pepper to taste
  • Olive oil
  • Pumpkin seeds
  • Microgreens

Instructions

  1. Sauté onion and garlic in olive oil until translucent.
  2. Add broccoli, and potato (if using), sauté for 2-3 minutes.
  3. Pour in vegetable broth, and simmer for 15-20 minutes until tender.
  4. Add spinach, and let it wilt for 1-2 minutes.
  5. Blend soup until smooth.
  6. Season with salt and pepper, and reheat if needed.
  7. Serve hot, topped with pumpkin seeds, and microgreens. Enjoy!
