Arugula-Topped Shrimp & Cheese Pasta

Ingredients

  • 8 oz pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 cups fresh arugula

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil and sauté minced garlic. Add shrimp and cook until pink and opaque. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add heavy cream and bring it to a simmer.
  4. Stir in Parmesan cheese until the sauce thickens, and season with salt, and black pepper.
  5. Add cooked pasta to the sauce, tossing to coat evenly. Let it simmer for a few minutes.
  6. Gently fold in the cooked shrimp till heated through.
  7. Serve hot, topped with fresh arugula.
