Arugula-Topped Shrimp & Cheese Pasta

Ingredients
- 8 oz pasta
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 cups fresh arugula
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil and sauté minced garlic. Add shrimp and cook until pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add heavy cream and bring it to a simmer.
- Stir in Parmesan cheese until the sauce thickens, and season with salt, and black pepper.
- Add cooked pasta to the sauce, tossing to coat evenly. Let it simmer for a few minutes.
- Gently fold in the cooked shrimp till heated through.
- Serve hot, topped with fresh arugula.
