
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 cup dairy-free coconut yogurt
- 1/4 cup unsweetened applesauce
- 1 1/2 cups fresh or frozen mixed berries
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C), and prepare muffin tin.
- Combine dry ingredients: flour, sugars, baking powder, baking soda, and salt.
- Combine wet ingredients in a separate bowl: melted coconut oil, yogurt, applesauce, and vanilla.
- Combine wet and dry mixtures, then gently fold in berries.
- Spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes.
- Cool muffins briefly in the tin, then transfer to a wire rack to cool completely.
