Dairy Free Berry Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 cup dairy-free coconut yogurt
  • 1/4 cup unsweetened applesauce
  • 1 1/2 cups fresh or frozen mixed berries
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C), and prepare muffin tin.
  2. Combine dry ingredients: flour, sugars, baking powder, baking soda, and salt.
  3. Combine wet ingredients in a separate bowl: melted coconut oil, yogurt, applesauce, and vanilla.
  4. Combine wet and dry mixtures, then gently fold in berries.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes.
  7. Cool muffins briefly in the tin, then transfer to a wire rack to cool completely.
